For that reason Vista Del Mar Phuket has some great recipe suggestions for the budding Thai chef! This month we have several tempting Thai dips, perfect when served round the pool with Thai Pork patties and other delicacies!
Cucumber Relish
Ingredients: 4 cucumbers, deseeded, peeled and finely sliced; 2 shallots or red onion, finely sliced; 3 cups rice vinegar; 2 tbsp sugar; 1 tsp salt; 1 small chilli, thinly sliced (optional); fresh coriander, chopped (optional)
Method
1. Mix the vinegar, sugar and salt in a saucepan and simmer on a medium heat until sugar is dissolved, then leave to cool.
2. Add the cucumbers, shallots, chilli and coriander (if desired). Mix well and then leave for 20 minutes to marinate. Serve at room temperature or refrigerate until chilled, and serve.
Sesame & Lime Dipping Sauce
Ingredients: 1 tsp sesame seeds; 1 tbsp sesame oil; 1 tbsp lime juice; 1 tbsp Thai fish sauce; 1tbsp soy sauce; 1 medium red chilloi, deseeded and thinly chopped.
Method
1. Pre-heat a small frying pan over a medium heat and then toast the sesame seeds until brown and popping. This will take approx. 1-2 minutes.
2. Remove from heat and mix with all other ingredients. Serve at room temperature or chill in fridge.
